CHRISTLETON CAKE
2 Eggs
2 egg yolks
1/2 cup sugar (generous)
1/2 cup butter
1 cup self-raising flower
2 1/2 oz. almond paste or marzipan
1/4 of a lemon (finely grated rind)

Cream almond paste, sugar, butter and lemon rind. Add eggs and yolks one at a time, beating in. Blend in sifted flour. Bake at 300 deg. mark 3 for 1 hour.

Can be made in a 1 lb. bread tin or in a ring tin.
